Sweet potato and sausage hash
Ingredients:
- 2 medium sweet potato, chopped into ½ inch cubes
- 1 pound sausage
- ½ cup chopped spinach
- ½ onion, diced
- 1 tsp thyme
- 1 tsp red chili flakes (optional)
- Salt and pepper
- 4 eggs
- 1 tsp fresh parsley, chopped
- cooking oil (olive or avocado oil)
Directions:
Heat the oil in a cast iron skillet over medium heat. Add in the sausage and let it brown and cook until it is fully cooked through. Remove the sausage to a plate and slice (unless using ground sausage in which case you can leave it as is). To the same pan, add more oil if needed, then add in the sweet potato, spinach, and onion and stir. Add the seasonings, stir to combine, and cook until the potatoes are fork tender and cooked through. Remove from heat, add the sausage back in and stir together.
While the hash is cooking: In a separate pan, fry the eggs and sprinkle with salt and pepper, cooking until the eggs are your desired doneness (over easy is great because the runny yolk will run through your hash but any style works great). Top the hash with the eggs and fresh parsley. Serve and enjoy.
