Sweet Potato Fritters
5 ingredient sweet potato fritters
Ingredients:
- 1 large sweet potato, peeled and grated
- 1 carrot, peeled and grated
- 3 eggs, beaten
- 2 tbsp flour (garbanzo flour or gluten free rice flour)
- Salt and pepper
- Oil for cooking
Directions:
Mix all of the ingredients together in a bowl (except for the oil). Heat a medium skillet with cooking oil over medium-high heat. Drop a large rounded tablespoon of the fritter mix into the pan and flatten slightly with the back of the spoon. Continue adding the fritter batter until the pan is full, with space between each fritter to allow for flipping. Cook until the fritters are brown (and hold together when you flip them), about 4-5 minutes on each side.
Serve with avocado, dip them in ranch or ketchup or enjoy them on their own!
