Purple Coleslaw

Purple coleslaw

This is currently our son’s favorite side dish. This slaw works as a great side with BBQ chicken or in tacos.

Ingredients:

1 small head of purple cabbage

½ cup mayonnaise

Juice of ½ a lemon

2 tbsp chopped fresh parsley

Salt and pepper

Optional additions: 1 tsp of cumin or 1 tsp paprika. I typically add the cumin if I’m serving it with tacos and the paprika when serving it with BBQ chicken.

Directions: thinly slice (or grate using the large holes on a box grater) the cabbage. In a medium mixing bowl, combine the mayonnaise, lemon juice, parsley, salt and pepper. Add in the cabbage and stir to mix.
