Taco Bowls

Taco bowls is a quick and easy go-to meal in our household. Diced up veggies cooked with ground meat adds extra veggies and flavor to classic taco meat. You can let each person assemble their own bowl which makes it fun but also allows everyone to get a bowl that fits their own tastes and preferences. Cooking the meat and veggies in one pot makes clean-up easy and your cook time quick. This makes a great filling meal that the whole family can eat and love.

Ingredients:

  • 1 yellow onion, diced

  • 1 bell pepper (any color), diced

  • 1 cup baby spinach or baby mixed greens, chopped

  • 1 lb. grass-fed ground beef (or organic ground chicken or turkey)

  • Taco seasoning – homemade (see recipe below) or ½ packet of natural store-bought taco seasoning, such as Trader Joe’s

  • Salt & Pepper

  • Avocado oil

  • Lettuce, chopped

  • Tomatoes, diced

  • Olives

  • Sliced avocado or Guacamole (see recipe below)

  • Optional: shredded cheese, beans

Directions:

Heat a large pan over medium heat. Add in your cooking oil and then add in the veggies. Cook the veggies for about 3-5 minutes, until they start to soften. Add the ground meat to the pan, break it up with a wooden spoon and let the meat brown. Add in salt, pepper, and the taco seasoning. Let it cook until the meat is fully cooked and the liquid from the veggies has completely cooked out, usually about 10-12 minutes. Assemble the taco bowls with your choice of toppings, and you’re ready to eat! Serve with our Mexican style cauliflower rice. You can also add in beans and cheese if you’re eating them.

For the guacamole: mash 1 large avocado with the juice of ½ of a lime, salt, black pepper and 1 tsp chopped fresh cilantro for a quick and easy guacamole. (Variation: if you like it spicier, add 1 diced jalapeno or dash of cayenne or chili powder.)

Homemade taco seasoning:

  • 2 tablespoons sweet paprika

  • 1 tablespoon granulated garlic

  • 1 tablespoon ground cumin

  • 2 teaspoons chili powder

  • 1 teaspoon ground coriander

  • 1 teaspoon dried oregano
