Pulled BBQ Chicken

Pulled chicken is one of my favorites to cook because I can put it on the stove, let it cook, and it takes minimal effort. I have made this for everything from a casual Wednesday night dinner with my family to social gatherings and even a baby shower; and every time I make it, someone always asks me for the recipe! As much as I’d love to keep the secret of how easy it is to make to myself, I want to share the recipe with you so you can share this delicious meal for your family!

Ingredients:

  • 1.5 lbs boneless skinless chicken breasts or thighs

  • ¾ cup BBQ sauce (My favorite sauce is Woodstock's original BBQ sauce- it only has 5g of sugar per serving (compared to upwards of 15g in others))

  • 2-3 cups Chicken stock

  • Looking to add extra veggies? Add in 1 cup of chopped spinach, 1 sliced red bell pepper, and ½ onion, sliced. The vegetables cook down with the chicken so they aren’t overtly noticeable and don’t alter the flavor but you’re getting the added nutrients from the veggies.

Directions:

In a large pot, add the chicken and BBQ sauce, and veggies if you’re using them. Stir to coat the chicken with the BBQ sauce, cover with chicken stock until the chicken is just covered and bring to high heat to boil. Once it boils, turn it down to a simmer (typically medium-low) and let cook for 1-1.5 hours. You don’t have to do much (other than stir occasionally) so while it cooks for a long time, there is no effort required on your part.  As the chicken cooks down, you will notice it starts to fall apart on its own when you stir it so what you end up with is pulled chicken, without having to shred it by hand once it is cooked. Serve with potato salad and roasted broccoli for a complete meal.

Got leftovers? This chicken works great as a leftover too. You can make lettuce wraps to use the BBQ chicken in a different way, making it feel like a different meal. You can wrap these the night before for an easy lunch on the go the next day. Just spoon some chicken into large leafs of whole lettuce (romaine, butter, green leaf, or red leaf lettuce all work) and wrap up. You can add a bit of coleslaw into these too for balanced flavor, (mix a bit of sliced cabbage mixed with mayo, salt, and lemon juice) to brighten it up and add freshness to your leftover chicken.
