Bacon Jalapeno Burgers + mustard aioli

Burgers have been an easy weeknight go-to in our household these days. We love a stuffed burger which adds extra flavor and makes it feel like a different meal. These bacon jalapeno burgers are delicious! Serve with a salad, veggie fries, mango salsa, guacamole, or your other favorite sides and you have a quick and easy meal.

Ingredients:

Burger:

  • 1 lb. grass-fed ground beef

  • 1 jalapeno, seeded and diced small

  • 3 slices bacon, diced

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt and pepper

Mustard Aioli:

  • 1/2 cup mayonnaise

  • 1 tsp whole grain or dijon mustard

  • 1 tbsp fresh parsley, finely chopped

Directions: Combine all the ingredients in a medium mixing bowl and use your hands to combine the ingredients. Form into 4 equal patties (or 6 smaller patties which is how I prefer them, especially for the kids). Using a large cast iron skillet, heat your skillet on medium-high and place the patties in the pan. Cook until the beef is fully cooked through, about 5-7 minutes, flipping them half way. Ensuring that your pan is hot before adding the patties will help you get a nice brown sear on the outside. If they are seared on the outside, but still a bit pink on the inside, reduce the heat to medium and let them cook for an extra couple of minutes. You can also cook these burgers on the grill.

For the mustard aioli: combine the mayonnaise, mustard, and parsley in a small bowl and stir to combine.
