4 ingredient Roasted Romanesco

4 ingredient Roasted Romanesco. We received a head of Romanesco in our produce delivery and weren’t sure what to do with it. I decided to roast it similar to how I cook broccoli and hope for the best. It turned out great, and was a huge hit with everyone, toddler and husband included!

Ingredients:

-          1 head of Romanesco cut into florets

-          2 cloves of chopped garlic

-          Avocado oil

-          Salt and pepper

Directions:  Preheat the oven to 425 degrees. Toss all of the ingredients together, place in a single layer on a greased baking sheet and pop in the oven for about 25 minutes, until the Romanesco just starts to brown and the stems are fork-tender. It’s that easy and it’s delicious!

Note: you can prep this ahead of time by mixing all of the ingredients in a large sealable plastic bag or Tupperware and storing it in the fridge for up to 24 hours before roasting. The Romanesco will absorb the oil and spices and comes out delicious!
