Coleslaw
Coleslaw recipe: - 1 tablespoons Dijon mustard or to taste
- 2 tablespoons maple syrup
- 2 tablespoons mayonnaise 
- ½ jalapeno pepper diced
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon minced garlic
- 1 tablespoons extra-virgin olive oil
- 1 large carrot, shredded
- 2 scallions, diced
- Salt and pepper to taste 
- ¼ cup minced parsley or cilantro leaves
- Mix all of the above ingredients and then pour over 4-5 cups chopped or shredded cabbage (red or green).
