Coleslaw
Coleslaw recipe: 1 tablespoons Dijon mustard or to taste2 tablespoons maple syrup2 tablespoons mayonnaise
½ jalapeno pepper diced1 tablespoon freshly squeezed lemon juice1 teaspoon minced garlic1 tablespoons extra-virgin olive oil1 large carrot, shredded2 scallions, dicedSalt and pepper to taste
¼ cup minced parsley or cilantro leavesMix all of the above ingredients and then pour over 4-5 cups chopped or shredded cabbage (red or green).
