Coleslaw
Coleslaw recipe:
1 tablespoons Dijon mustard or to taste
2 tablespoons maple syrup
2 tablespoons mayonnaise
½ jalapeno pepper diced
1 tablespoon freshly squeezed lemon juice
1 teaspoon minced garlic
1 tablespoons extra-virgin olive oil
1 large carrot, shredded
2 scallions, diced
Salt and pepper to taste
¼ cup minced parsley or cilantro leaves
Mix all of the above ingredients and then pour over 4-5 cups chopped or shredded cabbage (red or green).
