Coleslaw

Coleslaw recipe: 
  • 1 tablespoons Dijon mustard or to taste
  • 2 tablespoons maple syrup
  • 2 tablespoons mayonnaise

  • ½ jalapeno pepper diced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon minced garlic
  • 1 tablespoons extra-virgin olive oil
  • 1 large carrot, shredded
  • 2 scallions, diced
  • Salt and pepper to taste

  • ¼ cup minced parsley or cilantro leaves
  • Mix all of the above ingredients and then pour over 4-5 cups chopped or shredded cabbage (red or green).
